Mixture of polymeric metaphosphates, of which the hexamer is one, and is usually the compound referred to by this name. Such a mixture is more correctly termed sodium polymetaphosphate. Used as an additive in a variety of foods and beverages and commonly used for thickening, emulsifying, and adding texture.
